Sprats and Roasted Tomato Bruschetta

Smoked Sprats Bruschettas are rich and delicious!

I first came across sprats while I was at a Eastern European grocery store. They were in a plastic bag, they looked funky. I bought them. Good choice. They are versatile like sardines, but with a smokey flavor. \

Sprat and roasted cherry tomato,  bruschettas are a delicious breakfast if you are a fish person.  

 

Smoked Sprats Bruschettas

Smoked Sprats  and roasted cherry tomato bruschettas Ingredients:

  • Cherry tomatoes
  • Dried mint or dried thyme
  • Sea salt
  • Crushed red pepper flakes
  • Light brown sugar
  • Ciabatta bread, baguette or rye
  • Olive oil
  • Red onion cut into quarters, then thinly sliced
  • Smoked sprats (in a bag or can) or fresh if you can find

To make Smoked Sprats  and roasted cherry tomato bruschettas

Begin by heating your oven to 400 degrees F. Cut the cherry tomatoes in half and arrange them on a parchment-lined baking sheet. Drizzle some olive oil over the tomatoes and season them with salt and pepper. Roast them for about 20 minutes, or until they become soft and slightly caramelized.

Meanwhile, brush some olive oil on the baguette slices and bake them in the oven until they turn golden brown. Take the baguette slices out of the oven and keep them aside.

Then, open the can of sprats and pour out the oil. Use a fork to mash the sprats and combine them with the chopped parsley in a bowl. Add salt and pepper to taste.

To make the bruschettas, put a spoonful of the sprat mixture on each baguette slice. Add some roasted cherry tomatoes on top and sprinkle more parsley if you like.

Enjoy the Smoked Sprats Bruschettas while they are still warm.

  • 1/2 red onion cut into quarters, then thinly sliced
  • 6 smoked sprats (in a bag or can) or fresh if you can find

Notes

You could easily substitute sardines or a similar fish.
