Ingredients
  

  • 300 g cherry tomatoes
  • 1/2 Tbsp dried mint or dried thyme
  • 1/2 tsp kosher salt
  • 1/4 tsp crushed red pepper flakes
  • 1/2 tsp light brown sugar
  • 6 thick slices ciabatta bread, baguette or rye
  • 1/8 cup olive oil
  • 1/2 red onion cut into quarters, then thinly sliced
  • 6 smoked sprats (in a bag or can) or fresh if you can find

Method
 

  1. Begin by heating your oven to 400 degrees F. Cut the cherry tomatoes in half and arrange them on a parchment-lined baking sheet. Drizzle some olive oil over the tomatoes and season them with salt and pepper. Roast them for about 20 minutes, or until they become soft and slightly caramelized.
  2. Meanwhile, brush some olive oil on the bread slices and bake them in the oven until they turn golden brown. Or toast them in a toaster. Take the bread slices out of the oven and keep them aside.
  3. Then, open the can of sprats and pour out the oil. Use a fork to mash the sprats and combine them with the chopped parsley in a bowl. Add salt and pepper to taste.
  4. To make the bruschettas, put a spoonful of the sprat mixture on each bread slice. Add some roasted cherry tomatoes on top and sprinkle more parsley if you like.
  5. Enjoy the Smoked Sprats Bruschettas while they are still warm.

Notes

You could easily substitute sardines or a similar fish.
