Shrimp scampi is a classic Italian dish that combines succulent shrimp with a rich, garlic butter, and lemon. Shrimp scampi is traditionally served on a bed of pasta, but it can also be enjoyed on garlic bread.

Mise en Place: Gather your tools and ingredients, clean your workstation, take. out the trash, empty your dishwasher.
- The first step in making a shrimp scampi flatbread is to prepare the shrimp. Peel and devein the shrimp if you want. For small shrimp I skip this step as I don’t notice the shrimp poop. Heat olive oil in a pan. On my stove I set it on 10 out of a max of 15, so about 70% power and sauté the shrimp and cook until they turn pinkish white, and curl up, then remove them from the pan and set aside.
- Next, wash your pan, and add the butter. I set the heat at 4/15, and add your minced garlic. For this dish I like to use a garlic press, but dice by hand if you prefer.
- Let it cook about 6 minutes until the garlic becomes aromatic. The goal here is twofold. Cook the garlic enough to get rid of the raw flavor, and to infuse the butter with the garlic.
- Add some Parmesan cheese to the pan and, add the shrimp to the butter sauce, stir to coat well, and turn off the heat.
- Then, spritz the flatbread with some olive oil, or drizzle a little by hand. Spread the mozzarella cheese over the bread.
Try to evenly distribute the shrimp and garlic butter over your bread.
- Bake the flatbread in a preheated oven at 400 F until the cheese is melted.
- Garnish with red chili flakes and sliced scallion greens.

It’s a great dish to serve as an appetizer or a main course. I served it, as seen in the photos to my girlfriend as an appetizer, and it became her main course. So with that in mind, you might want to use smaller portions as an appetizer or serve it with a green salad if you serve it with as a main course.

- 4 oz shrimp peeled and deveined
- 1 flatbread of choice
- 1/2 cup shredded mozzarella
- 2 cloves garlic minced or pressed
- 1 tbsp. olive oil divided
- 2 tbsp. butter
- Pinch crushed red pepper flakes plus more for garnish
- kosher salt
- Freshly ground black pepper
- Lemon served as wedges on side
- 1 Chopped scallion Greens only - for garnish
