EZ Spanish Baked Cod

Living in Barcelona, cod (bacalao) is everywhere—and this is one of the easiest ways to enjoy it at home. This EZ Spanish Baked Cod is light, flavorful, and comes together with almost no effort. Fresh cod is seasoned with lemon, olive oil, garlic, and simple spices, then baked until perfectly flaky and tender. It’s the kind of dish that feels Mediterranean, healthy, and a little elevated without being complicated. You can serve it with potatoes, rice, vegetables, or just some good bread to soak up the juices. It’s fast enough for a weeknight, but good enough to serve to guests. Simple, reliable, and hard to mess up.

Ingredients
  

  • 12 oz cod fillets (2 x 6 oz) rinsed and pat dry (300-400g)
  • 1/2 tsp salt to taste
  • 1/2 tsp Paprika smoked or spicy are my favorites
  • 1 Tbsp lemon juice freshly squeezed
  • 1.5 Tbsp olive oil
  • capers to garnish

Equipment

  • Aluminum Commercial Baker's Half Sheet
  • Stainless Steel Kitchen Tongs
  • Wireless Meat Thermometer

Method
 

  1. Preheat oven to 400°F (205°C).
  2. Arrange the cod fillets in lined baking tray. Drizzle the olive oil onto the fish, followed by lemon juice, salt and paprika.
  3. *I prefer to use parchment paper as a liner for easy clean-up
  4. Bake the cod in the oven for 8 - 12 minutes, depending on the thickness of the cod. Garnish with capers and serve immediately.

Notes

*Frozen cods works perfectly as well, just put it in the fridge the night before, and make sure it is completely thawed. It will be very wet - make sure to dry it well.
