Ingredients

  • 12 oz cod fillets (2 x 6 oz) rinsed and pat dry (300-400g)
  • 1/2 tsp salt to taste
  • 1/2 tsp Paprika smoked or spicy are my favorites
  • 1 Tbsp lemon juice freshly squeezed
  • 1.5 Tbsp olive oil
  • capers to garnish

Instructions

  • Preheat oven to 400°F (205°C).
  • Arrange the cod fillets in lined baking tray. Drizzle the olive oil onto the fish, followed by lemon juice, salt and paprika.
  • *I prefer to use parchment paper as a liner for easy clean-up
  • Bake the cod in the oven for 8 - 12 minutes, depending on the thickness of the cod. Garnish with capers and serve immediately.

Notes

*Frozen cods works perfectly as well, just put it in the fridge the night before, and make sure it is completely thawed. It will be very wet - make sure to dry it well.
