This is a simple, humble and delicious dish that features cod seasoned with lemon juice, herbs and spices and baked until flaky and tender. Served with rice, potatoes, salad or bread for a fast and healthy fish dinner.
12ozcod fillets(2 x 6 oz) rinsed and pat dry (300-400g)
1/2tspsaltto taste
1/2tspPaprikasmoked or spicy are my favorites
1Tbsplemon juicefreshly squeezed
1.5Tbspolive oil

Instructions
Preheat oven to 400°F (205°C).
Arrange the cod fillets in lined baking tray. Drizzle the olive oil onto the fish, followed by lemon juice, salt and paprika.
*I prefer to use parchment paper as a liner for easy clean-up
Bake the cod in the oven for 8 - 12 minutes, depending on the thickness of the cod. Garnish with capers and serve immediately.
Notes
*Frozen cods works perfectly as well, just put it in the fridge the night before, and make sure it is completely thawed. It will be very wet - make sure to dry it well.
