Baked Caramelized Peaches with Salted Nuts

Ingredients
  

  • 1/4 cup maple syrup or honey
  • 4 ripe peaches halved and pitted
  • 1/4 teaspoon cinnamon powder
  • 25 g unsalted butter
  • 25 g salted mixed nuts roughly chopped (pistachio and cashews are great, but what ever you have.
  • Ice cream to serve (optional)

  • 1 Aluminum Commercial Baker's Half Sheet
  • 1 Stainless Steel Kitchen Tongs

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. In a small bowl, stir together 1/4 cup of honey, 1/4 teaspoon of cinnamon, and a pinch of salt.
  3. In another small bowl, toss together 1/2 cup of chopped mixed nuts, 2 tablespoons of melted butter, and a pinch of salt.
  4. Cut 4 large peaches in half and remove the pits. Place them cut side up in the prepared baking dish.
  5. Spoon the honey mixture evenly over the peach halves, making sure to fill the cavities.
  6. Sprinkle the nut mixture evenly over the peach halves, pressing lightly to adhere.
  7. Bake for 25 to 30 minutes, or until the peaches are soft and the nuts are golden.
  8. Serve hot with ice cream
